- 1small head cauliflower (about 2 cups, grated)
- 1jalapeno, minced
- 2eggs, beaten
- 2 TblspStonyfield Organic Greek plain Whole Milk yogurt (butter substitute)
- 1 1/4 Csharp cheddar (grate or buy pre-shredded)
- 1 1/4 Cwhite cheddar (grate or buy pre-shredded)
- 1 tsponion powder
- 1/4 tspsea salt
- 1/4 tspblack pepper
- 1/2 tspgarlic powder
- 1/2 tspbaking powder
- 1/4 Ccornmeal flour

Step 1
Preheat oven to 375˚F.
Step 2
Peel away the cauliflower leaves, leaving the stem intact to use as handle while grating. Grate cauliflower using a box grater. (Could also cut cauliflower and place in a food processor until smooth.)
Step 3
In a medium to large bowl, beat 2 eggs. Add cauliflower and cheese.
Step 4
Once combined, add all remaining ingredients.
Step 5
Scoop batter into greased ceramic baking dish.
Step 6
Cook for 30 minutes or until firm and golden.
